Well…after almost a year in my new ward I said goodbye to my VT District Supervisor calling this week. Lucky for me I get to hang on to the activities committee calling – who doesn’t like to plan fun times??
Anyway this week I was sustained as the Young Women’s Secretary. I have been told for years by those who know me that I should be in the Young Women’s program. I guess now we will get to see if they were right. So far I have only attended one meeting because my parents were in town for the weekend. But I am sure that in no time I will be fully submerged in the calling.

Reasons to celebrate
This one is for all of you out there!!
Really though, sometimes I have a really hard time trying to keep myself motivated. It is as if life is just sort of hum drum. At times I wonder if it is just life...at my job we only have 6 paid holidays a year - that is not very many in relation to the number of days that you work. By the way - New Years day to Memorial Day is the longest stretch EVER!
Moving on...well I found this website that I like to check when I am feeling like there is no reason to celebrate. I now know many reasons to look forward to each and every day!! In fact today is...National Jelly Bean Day! Who would have known!! I mean if I were more on top of things I could have planned a fun filled day in recognition to the BEAN! Maybe I will be more on top of things when it is National Zucchini Bread Day (April 25th) or Raisin Day (April 30th)!

Farmer's Market finds
OK, so if you live near me and have talked to me after I have been shopping at my Farmer's Market you know how much I LOVE it!!! Well I went there last Friday to just pick up a few things so I could have fresh fruit. I was amazed at the deals!! The 1lb strawberry container's were 3 for $1, and the green grapes were .39 a pound. Seriously I have never seen them priced so low before...
With that knowledge freezer bags and Ziploc containers were purchased ~ and it was back to the market. Last night I bought 18 packages (pounds) of strawberries, and 13.9 pounds of grapes (I really don't just know that - I happen to have my reciept here). Anyway the cart was packed full of fruit. After going through the check out line my total order was $10.65. Yes you read that correctly, I did say that I only spent $10.65 for all of that. After a few hours in the kitchen last night I can look and see that there are 14 Ziploc containers full of beautiful (and tasty) homemade freezer jam, and the rest of the fruit is stacked nicely in freezer bags already in the chest freezer. It is all very exciting for me since this year my focus has been on getting food storage put together. Now I have frozen fruit - just in case I get tired of the dried apples I got from the cannery last week.
***Here is the recipe for the Strawberry Freezer Jam***
4 cups mashed strawberries
4 cups sugar (or splenda) – make sure that you don’t short the sugar
¾ cup water
1 box fruit pectin
Mix 2 cups of strawberries and the sugar set aside for 10 minutes
Mix water and pectin in saucepan until it boils boil for 1 minute. Then add to strawberry/sugar mixture. Stir well until the sugar is dissolved (about 3 minutes)
Add remaining strawberries (about 2 cups), stir well. Pour in plastic containers leaving about ½” from top (it may grow in the freezer). Leave at room temperature for 24 hours then put in freezer.
Good in the freezer for 1 year, lasts in the fridge for about 3 weeks.
I used the Ziploc containers that were square, but only about 2 ½ inches tall, and it made roughly 5 containers per batch of jam.
~~Also for those of you who are local here in AZ. The farmer's market is worth the trip for sure!! It is just like a grocery but much much smaller (indoors of course) - and they still take your debit/credit card. It is on the south side of Main Street in Mesa between Greenfield and Higley. It is called Superstition Farmer's Market.

We all need Spontaneity
Really what is life without a little spontaneity every now and then??
I have a roommate who has been waiting for a missionary. She kept it pretty quiet and I didn’t even know about it until a few months ago. Well…he flew home last night but he wasn’t flying to Phoenix. She has long ago decided that she wasn’t going to be able to make it to the airport to welcome him home. We were sitting at the house last night around 9 pm and she was totally (and I am not exaggerating!) freaking out that he was almost home, scheduled to land in Tucson at 10:30 pm. We tried to find the tracker online so that she could watch his flight from LA to Tucson…but we were unsuccessful.
INSTEAD we convinced her that she really didn’t have a good reason to just not be at the airport herself. Sure she had a paper to write and school at 8 am (or was it 9 am???) anyway we reminded her that you only live once so do your hair and get in the car! We met our other roommate on her way home from work in a random parking lot…she parked her car and hopped in with us and we were off. Just 100 or so miles to go and we would be there...we missed the landing (50 miles out still) but he was still at the airport when we arrived.
It was a super fast trip that was totally unplanned but we had a good time and it makes a great memory. We are all quite a bit tired this morning, but we had FUN!

Dr. Glaser on the Nuremberg Medical Trials
So this post is pretty late in coming...but totally worth sharing what I learned. Pictured above is "L" on the right with Edmund Glaser, Ph.D. in the center {I'm on the left}
In January I attended the OHRP Conference (Office of Human Research Protection). Dr. Glaser was the keynote speaker that morning. He was drafted into the U.S. Army in 1946, Dr. Glaser was trained by the Signal Corps as a motion picture sound photographer. He was sent to Nuremberg to photograph the War Crimes Medical Trials. Today, his interest in the Nuremberg Trials remains keen and his memories still vivid.
That morning for nearly 2 hours we listened as he shared some observations and footage from the Nuremberg Trials, as well as reflections following this experience. It truly was an awesome experience to sit there and listen to him tell us all about what happened to him while he was there and since that time. He suggested the movie "Judgement at Nuremberg" as a good representation of what happened there. I haven't yet watched it but think that I will get around to it one of these days.
